Umami – the fifth taste

Most of us are familiar with sweet, bitter, sour, and salty…but mushrooms offer a delightful fifth taste for your palate – umami. Japanese for “delicious savory taste”, umami is a mouthwatering sensation often described as savory, brothy, or meaty. Umami offers depth and a long-lasting richness to any dish when you add mushrooms. Featured in this photo is the delicious shiitake mushroom that is high in glutamate, the amino acid responsible for the umami flavour. Cooking with mushrooms adds an “oomph” of flavour that enhances taste without simply adding more salt.

On particular the shiitake mushroom is rich, savory, and earthy offering a rich umami taste that is often described as meaty, woody, or even slightly smoky. When cooked shiitake mushrooms have velvety texture and release a robust aroma making them a satisfying vegetarian option.
